Balsamic Lime Sprouts

Recipe inspiration hits randomly throughout the week. I usually scribble notes to myself with the ideas and then head to the grocery after work on Friday’s for the ingredients. This week’s idea is balsamic lime brussel sprouts.

Until a few months ago I disliked brussel sprouts; mushy green balls? No thanks.

But what if I could make brussel sprouts that weren’t mushy balls? Enter shredded sprouts.

Cut off the stem, remove the outside leave and rinse the sprouts.

Drop ‘em in a food processor and shred.

Add garlic and chili powder to the sprouts and then boil/steam them for 5 minutes. You want to undercook them so they’re not mushy after the next step.

Add a tablespoon of olive oil to a hot pan and then pour in the sprouts. Top with cayenne, salt & pepper and sautee.

After 2 minutes pour balsamic reduction into the pan and combine.

Cook for another minute and then add the juice of one lime.

If you don’t like tart flavours start with 1/2 a lime, you can always add more! Mix well and it’s ready to eat!

Give shredded brussel sprouts a try, you won’t be sorry!
