On the weekend I usually think about what meals prepare the following week. The key there being usually, the only thing I planned this week was to use up what’s in the fridge.
This evening I was all out of goodies from Stella and while last nights veggie dinner rocked, I had leftover veggies for lunch (with the lamb) and didn’t want to repeat it again for dinner.
So what’s a girl to do? Raid the fridge of course. It seemed like there was nothing in the fridge but then I spotted the lone remaining egg and the rest was deeeelicious history.
Dinner on the Quick
Add last egg in carton to remains of egg whites, beat in a bowl. Shake shake shake in some FLAVA (Pepper, Cayenne, Parprika and Chilli flakes) and make it sizzle.
Heat up left over green pepper slices (in the pan before you cook the egg) and mix it with some broccoli/cauliflower and kidney beans. Add to egg and you’re golden.
How the heck did I get it out of the pan without mangling it?
Ain’t she purty? I topped her with some more red kidney beans (1 cup total). YUMMO!

I used to take Lakota regularly for the arthritis in my knee because my stomach can’t handle straight glucosamine. I’ve been trying to get back to taking it regularly since my knee has been acting and I needed to purchase some more but wanted to find a good deal on them.
My mom was nice enough to go out and compare prices for me today and I ended up with a FREE bottle! HOLLER!
This bottle is $36 but the woman at the Health Food Store gave it away free because it expires tomorrow!! (the pills are ok for 6 more months) How awesome is that?!
