Woah, the work week came back with a vengance today and it flew by! I managed to get some errands done on my lunch break and was in meetings the rest of the day, before I knew it I was on my way back home!
Tonight I decided to make Cajun Chickpea “meatballs” based on a recipe I saw on Vegan Dad. I made a few substitutions like adding chopped baby spinach and using my own mix of spices.
After I pulsed the chickpeas I added the sauted peppers and onions, and steamed spinach; mixed that up and then added whole wheat flour and cornstarch. I rolled up little “meat”balls and pan fried them with a little bit of oil and some PAM.
They turned out DELICIOUS!!! They were seriously good, I’m definitely making them again!
I served them up with some baby spinach, beans freshly picked from my garden and steamed carrots from the farmers market. Yumm! Perfect fuel before baseball, hearty but not heavy.
